After harvesting, the coconuts undergo a gentle steam‑distillation process to extract the medium‑chain triglycerides (MCTs), a group of highly digestible fatty acids that have been widely researched for their nutritional benefits. MCT oil contains four key medium‑chain triglycerides: C6 (caproic acid), C8 (caprylic acid), C10 (capric acid) and C12 (lauric acid).
